Black Beans & Corn Burger Recipe
As you can probably see, it's been quiet awhile since my last post. These past few weeks have been pretty frustrating as the laptop that I have used to blog stopped working and since the only way I can upload the pictures in my camera is through the SD slot in the laptop, I haven't been able to post. I've decided to forge on and if for the next few posts my pictures are less than stellar quality it is because I will be using my phone camera. It's not the ideal situation but I shall make it work.
Now on to today's post...
A few weeks ago I had my first black beans burger and it changed my life. I was never fond of beans (red, pinto, garbanzo etc) but I especially disliked black beans. There's just something about the texture, smell that I did not enjoy.
Now eating beans/legumes in general is supposed to be healthy so I am trying to incorporate more variety of vegetables and fruits in my diet. Finding a way to cook something I dislike and transforming into something that I love is challenging but I love to cook so it was a really fun process and in the end very tasty.
The black bean burger I had was off a vendor that had supplied the food for an event that I attended in Philadelphia. When I got home I did a little research and ended up combining and adjusting two different recipes that I found on Pinterest- Food 52 & Skinnytaste.
My version is NOT vegetarian (you can check out Food 52 recipe by clicking the link above). There is egg in this recipe, but feel free to make any adjustments necessary. You can take out the egg completely or use substitutes like flax eggs.
Ingredients
16oz can Black Beans (rinsed and dry)
3/4 cup Corn (Fresh/Can/Frozen)
1/2 cup yellow onions
2 clove minced garlic
1/2 cup sweet peppers (I used red & orange)
1 1/2 tsp cumin
1 large egg
1/2 cup + 1 tbsp quick oats
1/2 cup (or more) breadcrumbs
Optional Toppings
Avocado
Salsa
Step 1
Rinse, dry and mash the can of black beans. After using a coriander, I transferred the beans to a kitchen towel and patted them dry. Then I mashed the beans with a masher (I didn't completely mashed the beans because I still wanted some texture so if some of them are a little chunky it's okay!).
Step 2
Mix the corn, onions, garlic, sweet peppers, cumin and egg with the beans until everything is well incorporated.
Step 3
Add the quick oats and start with a 1/2 cup of breadcrumbs and mix well (at this point, my dad gave up on the spatula and started using his hand). You have to make sure you have enough binders so if the mixture is still a little bit watery you can wait a couple of minutes to see if the oats will soak up some of the liquid, if not add a couple table spoon of breadcrumbs at a time until you reach the desired consistency.
Step 4
Form your patties. This ingredients will make between 4-6 hearty patties. To form the patties you can free form it, but my dad had this burger mold from cutting the top of a soup container you get from take out restaurants. He usually use this to make regular burgers so that they are uniform in size and that's what I used for this recipe.
Step 5
Preheat skillet or grill. Seasoned and oiled the skillet before turning on the stove. Cook on a medium to medium -high heat for about 2 1/2 to 3 minutes on each side or until each sides are golden brown.
Step 6
Top the burger with some toppings and enjoy! I topped my burger with some homemade guacamole and salsa. It was delicious and super filling!
